Place the oven racks in the upper and lower thirds of the oven, and preheat to 325°F.
Slice the salami into very thin pieces.
Arrange the salami pieces in a single layer on two large baking sheets lined with parchment paper.
Bake for 10-12 minutes switching the position of the baking sheets halfway through.
Remove from the oven and transfer the salami slices to a cooling rack.
Add a sprinkle of parmesan cheese on top of the salami slices before baking.
