Honey Mustard Chicken with Sweet Potato Mash and Broccolini
Two 6-ounce chicken breasts
1 large sweet potato (8 ounces)
2 tablespoons whole grain mustard
1 tablespoon honey
1 tablespoon thyme
2 tablespoons garlic herb spice blend
1 tablespoon olive oil
2 cups broccolini
Preheat your oven to 425°F.
Wrap the sweet potato in aluminum foil and place it in the oven to roast for about 45 minutes or until soft.
Combine the mustard, honey, thyme, and garlic herb spice blend.
When the sweet potato is done, season the chicken breasts with the spice blend and sear them in the olive oil until golden brown on one side.
Transfer the breasts to a baking tray and evenly distribute the honey mustard glaze over the caramelized side.
Roast in the oven for about 15 minutes or until cooked through.
Blanch the broccolini in salted boiling water until tender.
Peel and mash the roasted sweet potato and season with salt and pepper to taste.
