Sun-Dried Tomato Stuffed Chicken
ingredients
- 4 6 oz chicken breasts 
- 4 oz fresh mozzarella. sliced 
- 8 pieces sundried tomato in oil, drained, chopped 
- 1 tbsp olive oil 
- Basil 
- Salt + pepper + oregano 
- Balsamic glaze (optional) 
INSTRUCTIONS
- Preheat oven to 400 F. 
- Season chicken on both sides with salt, pepper, and oregano. 
- Slice open chicken breasts half-way. 
- Stuff with the mozzarella, sun-dried tomatoes, and basil. Secure with toothpicks and drizzle with oil from sun-dried tomatoes. 
- Bake for 20-25 minutes.
