Pesto Egg Cups
ingredients
- 12 slices prosciutto 
- 12 eggs 
- 6 tbsp pesto 
- fine sea salt 
- freshly ground pepper 
- Cooking spray

- Preheat the oven to 350 degrees. 
- Lightly spray each well of a muffin tin with cooking spray. 
- Line each well with parchment paper. 
- Place a piece of prosciutto into each well like a muffin liner. 
- Crack one egg in each prosciutto pocket and season with fine sea salt and freshly ground pepper. 
- Bake for approximately 10-12 minutes or until eggs are done to your liking. 
- Remove from oven and spoon ½ tbsp pesto on top of each egg & enjoy!
